 AVIAL (SANKRANTI SPECIAL)

 
Ingredients
Coconut1 finely-grated
ChannaDal 1 tsp roasted
UradDal 1 tsp roasted
Asafoetida(heeng) 1/4 tsp
GreenChilies 2
TurmericPowder 1/4 tsp
Assortmentof vegetables, excluding salad and leafy vegetables and beetroot (cut anddiced)

Method
Blanch the diced vegetables and set it aside for later use. Grind channadal, urad dal, asafoetida and green chillies to a paste. Heat ghee in aseparate shallow pan and add the grounded paste. Fry lightly till it emitsfragrance. Add the grated coconut and saute it over a low flame. Add theblanched vegetables and cook till done. Add salt to taste. Serve hot.

AVAL PAYASAM RECIPE (SANKRANTI SPECIAL)



 
Ingredients(Serves2)
Milk1 litre
Aval(rice flakes) 1/4 cup
Sugar1 cup
Cardamompowder 1/2 tsp
Cashewnuts few
Raisinsfew

Method
Boilmilk in a pan. Add the Aval or rice flakes into the boiling milk. Stirconstantly until the quantity reduces to one-half. Add sugar and the powderedcardamom into the consistency and stir well. Add the cashew nuts (preferablyroasted) and the raisins and serve it hot.
